2025 PH CHILI COOK OFF: THE WINNING RECIPE

The PH Chili Cook Off brought the heat last week, and it was one for the books! Our chili enthusiasts gathered to share their best homemade recipes with bold flavors and secret ingredients.

Try Luke’s winning chili recipe for yourself and bring the flavor to your own kitchen:
Ingredients:
4 tablespoons olive oil
1 yellow onion, chopped
1 green bell pepper, chopped
4 jalapeno pepper, chopped
3 tablespoons chili powder
2 tablespoons ground cumin
½ teaspoons Cayenne pepper
2 teaspoons smoked paprika
6 garlic cloves, minced
½ cup tomato paste
2 ½ pounds lean ground beef
¼ cup Worcestershire sauce
¼ cup of low sodium soy sauce
1 pinch garlic powder, or to taste
2 cups of beef bone broth
1 (28 ounce) can fire-roasted diced tomatoes
2 teaspoon balsamic vinegar reduction
2 tablespoon chipotle in adobo sauce
1 teaspoon salt
2 teaspoon dried oregano
½ teaspoon ground black pepper
1 (16 ounce) cans dark red kidney beans
Directions:
1. Heat oil in a large pot over medium heat; cook and stir onion, bell pepper and jalapeño peppers until softened.
2. Stir in chili powder, cumin, cayenne pepper, smoked paprika, garlic and tomato paste and cook for 1 minute.
3. Add the beef and cook until browned and crumbly, 5 to 7 minutes.
4. Add Worcestershire sauce, soy sauce and garlic powder. Pour in bone broth over beef. Continue to cook, scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes.
5. Stir in diced fire roasted tomatoes, chipotle in adobo and balsamic vinegar reduction to the beef mixture. Season with salt, oregano, and black pepper.
6. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.
7. Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
8. Serve hot and enjoy!
